Classic New England Lobster Rolls Recipe

Ingredients
- 1 lb cooked lobster meat, chopped
- 1/4 cup light mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 4 split-top hot dog buns
- 2 tablespoons unsalted butter, melted
- Optional: 1 stalk celery, finely chopped; 1 tablespoon fresh chives, chopped
Instructions
- 1. Prepare the lobster meat by chopping it into bite-sized pieces if not already done.
- 2. In a medium bowl, combine the chopped lobster meat, mayonnaise, lemon juice, salt, and pepper. Mix gently until combined.
- 3. If using, add finely chopped celery and chives, and mix in.
- 4. Brush the inside of each split-top bun with melted butter.
- 5. Heat a skillet or grill pan over medium heat, and toast the buns butter-side down until golden brown, about 2-3 minutes.
- 6. Fill each toasted bun with the lobster mixture, dividing equally.
- 7. Serve immediately with additional lemon wedges on the side.
