Ingredients
- 3 ripe bananas
- 1/2 cup rolled oats
- 1 tbsp unsweetened cocoa powder
Instructions
- 1. Preheat oven to 350°F (175°C). Peel and mash 1 ripe banana in a mixing bowl.
- 2. Add rolled oats and cocoa powder to the mashed banana. Stir until a thick dough forms.
- 3. Divide the dough into 8 equal pieces and shape into small discs on a parchment-lined baking sheet. Flatten slightly.
- 4. Bake for 10–12 minutes, until firm and lightly golden. Let cool completely on the sheet.
- 5. Meanwhile, peel and slice the remaining 2 ripe bananas, then freeze the slices until solid (at least 2 hours).

- 7. Spoon about 1 tablespoon of nice cream onto the flat side of one cookie, then top with another cookie to form a sandwich. Repeat with remaining cookies.
- 8. Place the assembled sandwiches on a plate and freeze for at least 30 minutes to set before serving.
